EN – The Dough. 1 kg flour (Typ 550), 625 ml lukewarm water, 30 g fresh yeast, 2 tablespoons of sugar, 2 tablespoons of seasalt, flour for dusting
EN – Step 1. Put the flour on the work surface and press accumulate a large depression in the middle. Pour half of the water in the well, yeast, sugar and salt and gently stir with a fork.
Step 2. Carefully handle the flour from the outside to the inside (don’t destroy the flour walls, otherwise there is a flood in the kitchen). If the mass is slowly tough, you can add the remaining water gradually. Pollinate your hands with flour and beat and press the dough together until it shines silky and has become elastic (takes about 5 minutes and is quite exhausting).
Step 3. Give the dough in a bowl , cover it and let it rise for about 30 minutes until it has doubled its size – the perfect place for this is where it’s warm, moist and without drafts.
Step 4. Now you have to hit the air out of the dough again for 30 seconds, shape and flavour it as necessary to fill it later. Now you let the dough rise a second time for 30 minutes. (This is the most important part for an airy and light structure.)
Erst jetzt könnt ihr den Teig formen und würzen, wie es später zum Befüllen nötig ist.
Lasst den Teig ein zweites Mal für 30 Minuten gehen. (Das ist der Wichtigste Teil für eine luftige und leichte Struktur.)
EN – Step 5. Pollinating your work surface with flour and roll the dough into a 1 m long and 18 – 20 cm wide rectangle. Fill it now with everything you want (ham, basil, leftover Easter eggs, cheese – best residues that have gone, dried tomatoes, olives) give it a little olive oil, salt and pepper. Put the dough on both long sides. Fold it up to form a ring and push the two ends together / with each other.
Step 6. Put the ring on a dusted sheet and bake it in a preheated oven for about 30 – 45 minutes at 180 ° C until it’s golden brown. Cool the bread and take it with you to a BBQ or a picnic.
